Jonathan Honeyman -
The Aberfoyle Butcher
“Undressing” the Haggis
The Aberfoyle Butcher gives a no-holds barred demonstration of what exactly goes into traditional haggis and how it's made, and tells us why we should all be championing Scottish meat.
Phoebe Weller -
The Roving Fromagier
A Scottish cheese Chewtorial
Self-confessed ‘cheese geek’ and Roving Fromagier Phoebe Weller will argue and prove (by taste of course!) that Scottish cheese is as good if not better than cheeses from around the world.
Chris Charalambous – Chef/Proprietor
Bone Marrow Fudge
Before Chris opened the award-winning Cail Bruich in Glasgow’s West End he spent time at the world-famous Noma in Copenhagen, where he learnt an interesting twist on of the classic confection, fudge. Here he demonstrates how to make it!
Mark Williams -
Galloway Wild Foods
Our Edible Landscape
They say the best things in life are free, and Scotland's only full time foraging tutor will prove it. In an interactive talk, Mark Williams of Galloway Wild Foods will showcase Scotland's wild larder, demonstrating how to eat and drink like royalty from our indigenous plants, fungi and seaweed.
Stuart Bale and Alistair Kelsey -
A Scottish Cocktail Experience
Learn how to create delicious cocktails by combining foraged food and modern techniques with the best drinks Scotland has to offer. Our experts are Glasgow expats Stu and Ally, now at Strangehill, one of London's alcoholic drinks consultancies. Their clients are amongst the top names of the world’s bar, restaurant and hotel scenes.
